One of my favorite things about going to the farmers market is that, with just a few items, I walk away with fresh ingredients to serve with dinner throughout the week. This week, oranges are the star of the show! And after juicing, and packing my husbands lunch bag with slices, I still find myself with oranges in the kitchen! So here is a simple recipe, made with items you can most likely find at your local market, that will have you using those oranges still sitting on your counter! Additionally, the dressing recipe is one of my simple go-to's for any salad, made with easy and natural market ingredients.
INGREDIENTS:
Salad:
2 oz. arugula
1/2 cup sliced almonds
1/4 cup crumbled goat cheese
1 orange
Dressing :
1 1/2 Tbs. olive oil
1/2 juice from lemon
CITRUS MARKET SALAD RECIPE:
2 servings ( 3 'side salad' servings )
1. Prepare the dressing in a separate bowl by adding olive oil and squeezing the juice of half a lemon. You can add pepper to this as well! Just shake it up and it is ready to go.
2. Rinse arugula and place in serving bowl. Top with almonds, goat cheese, and oranges - sliced into wheels.
3. Drizzle dressing over top and toss salad until evenly mixed.
5. Recipe can easily be doubled or more for larger servings.
